Ingredients for polenta
Pour the spring water into a clean pot and wait until it starts to boil. Add salt and while you stirring the water slowly sprinkle some polenta. Stir really well and it'll start to get thicker and thicker soon. Now put the heat on medium and leave it to cook for about 15 minutes, stiring from time to time. In a pan, heat up the coconut oil and when it's hot, throw the chopped leeks and brussel sprouts in to it. Saute and add the spices. Stir really well and as a final step add the chopped parsley. If you want, you can add a bit of ginger powder as well.
Garnish with some roasted hazelnuts/almonds.
